One bundle of Kale

One bundle fresh spinach

? red onion

2 yellow squash

1 tomato

1 clove garlic

2 boneless chicken breasts

? cup cooked quinoa

? can chickpeas

  1. Chop and mix all ingredients in a bowl with olive oil.

  2. refrigerate until ready to eat.

  1. To cook, take 2 heaping handfuls and cook in a pan with 1 tablespoon olive oil. Add ? cup of water.

  1. Season with garlic powder, Oregano, thyme, sage, and a little sea salt. Heat covered for 10-15 minutes. Then add ? cup marinara sauce or broth and bring to boil. Enjoy!
